The holidays are here and we’re ready to decorate the tree, drink some hot cocoa, and spend time with family and friends. One great way to share the Christmas spirit is to make some delicious Christmas cookies for yourself and others.
At East Ohio, we love a good Christmas cookie recipe, and this week, we’re sharing our favorites with you. So, who’s ready to make some tasty Christmas cookies with us?
Courtney Martin’s Frosted Cinnamon Cookies
Ingredients for cookies:
1 cup butter, softened
1 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
3 cups flour
3 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
Ingredients for frosting:
4 oz. cream cheese softened
8 tablespoons butter, softened
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
1-2 teaspoons milk or cream, as needed
Additional cinnamon for sprinkling
Instructions:
- Mix the cookie butter and sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla, and mix well.
- Add the flour, baking powder, cinnamon, and salt, and mix until a firm dough forms. Chill for 30 minutes. Preheat oven to 375 degrees F.
- Roll the dough into one-inch balls and place on baking sheets lined with parchment. Flatten each ball slightly with your hand or with a drinking glass to be about 1/3-1/2 inch thick. Bake 7-9 minutes or until the bottom edges are just slightly golden brown. Remove to a cooling rack and let cool before frosting.
- To make the frosting, beat together the cream cheese and butter until light and fluffy. Add the powdered sugar and beat until smooth. Add the vanilla and milk as needed to reach desired consistency. Beat until light and fluffy.
- Pipe onto cooled cookies (you can use a 1M tip or snip off the top of a zip-top bag) in a spiral shape. Sprinkle the tops with cinnamon or cinnamon sugar.
Natalie Gratteri’s Italian Pizzelle Cookies
Ingredients/Supplies:
3 eggs
1/2 teaspoon anise
2 teaspoon baking powder
1 teaspoon vanilla
3/4 cups flour
1/2 cup butter or margarine, melted
3/4 cup of sugar
Waffle or pizzelle iron
Instructions:
- Beat eggs and sugar. Add cooled melted butter and vanilla and anise.
- Sift flour and baking powder and add to egg mixture.
- Batter will be stiff enough to be dropped by spoon.
- Drop spoonfuls of batter into waffle or pizzelle iron and cook until golden brown.
